I would like to save my daily blogs to my computer as Word Docs in anticipation of formatting for publishing as a book.

You can actually publish blog posts directly from Microsoft Word. If your posts are mostly text with occasional images, this usually works fine. If you’ll lots of formatting or HTML to add though, Microsoft Word tends to add extra code that makes some items appear different than expected.
There are several other offline apps that will let you save your posts on computer and then publish to WordPress.com:

Allow me to clarify:
My desire is to take my posts already published on my WordPress Blog and convert/save them to a Word Doc to my computer.
In other words, not going from Microsoft Word to the blog, but from the blog and saving as a Word doc to my computer?
Any help to avoid the magnitude of cutting and pasting over a years worth of blogs will be much appreciated.

I’m afraid there isn’t a really easy way to do this. The only export option for your already-published posts is XML format, which doesn’t look great in Microsoft Word (or any other word processor for that matter). The “easiest” way to do this would be to copy and paste the posts (“easy” but tedious). I did some searching for an XML to Word converter, but I didn’t find one that came highly recommended.
One other possible solution would be to place the “Print” button at the end of your posts in the sharing functionality (looks like you already have that setup). Then, you should be able to save the posts as PDFs. From there, it appears as though Adobe has a “Save as Text” feature explained here:
