Is there an option just to use the classic administrator interface?

I really like the classic administrator interface, but as I work on posts, etc., it all defaults back to the frustratingly way too simplified new interface. Is there an option to just stick to the classic interface?

Nope. But you can bookmark this:
1. To use the classic editor to create posts
go to Dashboard > Posts > Add New
Model example:
