How do you get the default “Username : just another wordpress.com site” at the top of your main page to go away? I’m new here and am sad that there isn’t a user-friendly User Interface like in xanga.com, for people who are old-school and beginner HTML users like me who like to customize…

That’s called a “tagline” and it can be changed here > Settings > General

That’s your tagline. You can either replace it or empty it out completely under Settings->General.
If you REALLY like to customize, you may not be happy here. Because we share the guts of our blogs with everyone using the same theme, the customization options here are limited. You can do a lot with certain themes, and then if you want more control you can get the paid CSS upgrade (don’t buy it if you don’t already know CSS well) but if you’re an inveterate tinkerer, you may be happier with an independent WordPress.org install.
