Is there any way that I could use landing pages in wordpress so that when someone enters in their information, they will be able to download a document?

If you want to embed the document itself into a post, then you will have to use a third party application like Scribd or Google Docs.

Is there any way that I could have someone who is reading the blog put in their information, before they are able to download the documents I have on my blog? I would like to know who is downloading the different documents.

No but there is a workaround.
Use the Contact form and email them the documents after they’ve filled it out.
