Linen Theme–Centering my header and the "read more" tag

  I’ve been trying to edit my photo to be 900 px wide and can’t seem to figure out how to do it. Is there any other way to center the header image?

  Second, what’s the “read more” tag I keep reading about? I keep seeing people talk about it, but can’t find a thread that actually says how to insert a read more tag in your post. Is is a html thing or am I missing a button?
