Hello,
How can I customize the portfolio’s links? I would like to link them to an other site (always a different one) instead of an internal page of my blog.Thank you

First, are we talking about this site? http://www.mariopetillo.com/ It does not look to be a WordPress.com site.
Second, inserting external links are no different from inserting internal links. In the place of where you are inserting internal links, you can choose to insert external links and clicking on that text will take the readers to the external links where you want to take them to.
If you are referring to opening links on a new tab, please note this point from this page – https://en.support.wordpress.com/links/ – “Open link in a new window/tab: If this box is checked clicking on your link will open up a new window/tab.”

It’s not possible to add custom links to portfolio projects using the Jetpack portfolio functionality, as you are here:

Projects are automatically linked up to each single project.
