Static pages that we bloggers create http://en.support.wordpress.com/pages/ will nerve automatically update. Only dynamic category pages will do that. http://en.support.wordpress.com/category-pages/
We organize our posts by use of categories. To organize your posts, assign categories and sub-categories, create a custom menu and include them in it.

This was asking about pages. Why do you assume everyone who uses WordPress is a “blogger”. I use it for my portfolio, so I don’t give a rip about “posts”. I would like the actual question of the inquirer answered, but you seem so focused on Posts.
SOME people actually want and need to use PAGES. And how the heck do you link pages to menu items?

If you don’t use a custom menu, pages are automatically linked in your header, provided you’ve used a tabbed header theme.
