Linking to Categories?

How do I link my new blog to categories related to the theme of my blog? I have set up a few tags but from reading tips on this site it seem they are not the same thing…Help!
The blog I need help with is: (visible only to logged in users)

You must create categories when you Write or Edit a post. It’s in the sidebar on the Write/Edit page, on the right-hand side. Categories don’t exist until you create them, and they don’t attach to the blog as a whole but rather to each post.

Also note that until you actually assign categories to posts that you have published there will be no data for the Categories widget to display. -
