Longer email newsletter excerpt

I’m trying to have a longer version of my newsletter emailed — I don’t want it to be the ENTIRE post, but I’d like it to at least be 25-30% of the article. That would probably be about 500 words.
If I turn on “excerpt” for my newsletter emails, it only sends a really short summary. If I turn it off, they get the entire article.
How can I get something that is a happy medium and includes pictures?
