How can I have a domain name map to wordpress.com but host email elsewhere?
The blog I need help with is: (visible only to logged in users)

WordPress.com does not provide an email service for domains.
To add an email service one has to jump these hoops > http://en.support.wordpress.com/domains/add-email/ -

http://en.support.wordpress.com/domains/#important-notes-before-upgradingIn order to map to a domain one must have an underlying .wordpress.com subdomain blog to map from http://en.support.wordpress.com/register-a-blog/ and the domain name you desire must be available for purchase.
After you have registered a .wordpress.com blog you log in as Admin under the exact same username account that registered the blog and purchase a domain name by purchasing an annually renewable domain mapping upgrade for the blog from the blog’s dashboard at > Store > My Upgrades.

So I point the name servers to wordpress.com from 1and1 (where the email is hosted) then once it has propagated, inside my wordpress.com dashboard, use this technique to point the email records back to 1and1:
http://en.support.wordpress.com/domains/add-email/add-other-email/
Is this right?

You can actually make both changes at the same time.
Name servers to WordPress.COM – then records to make the mail work are changed at WordPress.COM.
