Menu Combining Categories That 'Are Not'

No idea how to title this thread, so I hope it’s intriguing.

I’ve created menu items for my most common categories. I would like a catch-all button (Called “What Else?”) that will put all my posts that are not in those categories on a page.

I am NOT talking about “Uncategorized” posts.

I have a menu item each for “Projects” and “People” and “Process”. But I have a random post that’s categorized as “Problem” and I will have a few more that are categorized as something else (let’s say, “Politics” and “Places”). I don’t want them all lined up on the menu – I’d rather just have users click on “What Else?” and see all of the misfit toys (“Politics”, “Places”, “Problems”) on one listing.

Is there a way to create something that is something like
    https://bspokedotnet.wordpress.com/category/
NOT
-managing-projects-
NOT
-managing-people/ etc?

The blog I need help with is: (visible only to logged in users)
