Menu, Pages, Posts, Categories

Need help with several issues:
– I am using a Mac to develop my blog and chose the Eighties them. Somehow, I deleted the default menu options. The menu tab lists the default HOME option. I added two pages so those two options are also listed in the menu.
– I set up the two pages just to get the content up but that’s not what I really want. On this blog, I want to make posts in five different categories. In WP jargon, I guess these would be parent categories.
– Each of the parent categories, will have several children categories.
– I would like to set up the five parent categories now and add the children categories as the blog content develops.
– I would like for the parent categories to be listed and then drop down to children categories.
– Is it possible to have parent, children, then, one more layer past children?
– I have a very lengthy post. I would like to have some of the copy then insert the “read more” link but am not sure how to do that.Thank you,

I thought the theme I chose may be the reason I can’t set up the page exactly how I want to. I activated the Goran theme, then, went back to Eighties. Now, I have to menu icons on the front page.
