Hello Deb, I tried to replicate your menu items on my test site. Could you check if your menu items at the Customizer look similar like mine in the screenshot below?
I noticed that all of your sub-menus of the Countries are actually under the Uncategorized category. If you wish to show only the Main Category of Countries and Sub-Category of each of the countries without the posts at the menu, you may want to create a main category called Countries and the sub-categories like Indonesia, Mexico, etc. Then assign your posts to each of these categories.
When you’re done, edit your menu items to have category Countries as main menu item and all the sub-categories as sub menu items like the screenshot below.
Then, the menu will look like this: https://snag.gy/MsI8Xo.jpg.
Please let me know if you need more help or the above doesn’t match your requirement. If possible, take screenshot of your Menu screen at the Customizer so we could have a look.
