  Is there anyway to display only the ‘Site Admin’ and ‘log in’ or ‘log out’ rows while choosing the widget Meta? I want to leave out ‘entries RSS’ etc ..

  Not directly. You can write links to those pages in a text widget instead. Or (to me, better) add them to the bookmarks bar of your browser.
