Missing Widgets in my theme

Hi All,
Massive newbie at this and almost embarrassed to ask this question.
I have my account with WordPress.com and am trying to implement a theme and having issues. i generally like to try and figure this stuff out for myself but am coming across a constant hurdle for my learning;Every time i look at a tutorial video the dashboard options displayed are so completely different than mine
I understand that wordpress versions update over time (maybe to simplify) but it gets to the point where i’m seriously thinking that there is an entire section of options i can’t reach, it feels like i’m on a Diet WordPress version with massively scaled down option – Do i need to pay more for more options?
All i seem to have is the admin page and a customiser, is this correct. For example Where is the inactive widgets setting under the ‘appearance’ tab i have seen on so many videos
Any help, info, insight would be massively appreciated!

I also wanted to make you aware that you can access the WP Admin dashboard by adding /wp-admin to the end of your sites URL like so:
http://beautyandseoul.co.uk/wp-admin
