Modifying the layout of one category page, but not others

My site (www.uunder.net) uses the columnist theme.
To best suit the majority of the site’s content, the menu has been set up with ‘categories’, instead of ‘pages’.
I also like how this means that the full menu appears the same within each ‘category’ (as opposed to reducing to just offer ‘home’ within ‘pages’).Is it possible to modify the page layout of two of the ‘categories’ without losing the top full menu? Ideally, I’d like the content within ‘about’ and ‘contribute’ to read as full posts instead of initially as previews… but I can’t work out how to do that without turning them into pages (which affects the top menu functionality, as above).
Any tips = much appreciated!

Go to http://uunder.net/category/about/ and to http://uunder.net/category/contribute/ edit the pages to remove the more tag that you inserted into the text.

Thanks for the quick response (and apologies if I’m being dim) but I’m not sure your suggestion does the trick.
When I look at the ‘text’ in the edit setting of each page, there’s no ‘more tag’ to remove.
I’m guessing that the ‘read more’ tags at the bottom of the preview posts in both the about and contribute pages have something to do with the set design elements of the site (like the width of the columns?).So I suppose what I’m asking (in a round about way) is whether it’s possible for the single posts within each of those categories to break the set column widths of post previews.
Another possibility would be whether it’s possible to set up both ‘about’ and ‘contribute’ as pages instead of categories but keep the exact same full menu at the top.

Yes you can create static Pages for About and Contribute.

You can create a custom menu and add them and any of the category pages of your choice into it too.
