Morning After theme: need help/question about using Custom Menu for pages

I’d like to create some solo pages (like landing pages) only available via a link and not available in the menu bar as a Parent or Child page.

I found through searching forums where people asked this question about other themes and were directed to the Custom-Menu, which the Morning After theme offers, but I’m still not clear on if this can do exactly what I’m asking or HOW to do it. (I’d like to point out I’m completely new to wordpress.com and currently only have free theme version, i.e., I have not purchased a Custom upgrade. I also have VERY limited “basic” coding knowledge, so for now, I’m trying to avoid getting into custom editing via coding and CSS stylesheets.)

    My url is:
    http://abcdesignlab.com/

Currently I have my “Freelance Graphic Designer” page listed as a Child page as follows:
    http://abcdesignlab.com/about/design-portfolio/freelance-graphic-designer/

But I’d like to have it exist as a stand-along page (like a landing page) but not show in the menu bar at all (you would only be able to access it from a direct link, such as from another page). Is this possible and can I do it using the Custom Menu? If so, a couple step by steps would be GREATLY appreciated! Trying to figure out the Custom Menu, but so far, no luck.

The blog I need help with is: (visible only to logged in users)

When you create a custom menu you decide exclude what to include or exclude. Can you exclude that page – yes you can. Simply go into your custom menu, delete it and save the menu. Can you place a link to that excluded page in a text widget in your sidebar – yes you can.

Please read this excellent post Guide to the Morning After.
