My site looks different in customise mode

I’m just starting my second site for someone and have selected a theme to start with. I’ve added some widgets to the right hand side and a menu but when I view it on my ipad the widgets display at the bottom and the menu no longer goes along the top and groups them.
The strange thing is when I go into customise mode (still on the ipad) it looks fine. Why can’t it display like this? I’ve turned OFF the mobile mode so I wasn’t expecting it to display differently.
Also, I know it is forbidden to remove the theme and wordpress footer (I understand this on a free theme but I was surprised I can’t on my other site where I paid for the theme) but can I change it? Customize isn’t spelt correctly for the UK so it doesn’t look very professional.

Because of your theme’s responsive design the layout looks different on a mobile device, like the iPad. The sidebar is therefore moved to the bottom of the page. You can read more about this at http://en.support.wordpress.com/themes/mobile-themes/
All WordPress.com bloggers are required to maintain the credit links, even our VIP bloggers. Please do not hide or alter text or links for the footer credits or the toolbar. Modifying the style of the footer text (i.e. colors and font size) is fine as long as it’s still readable.

Am I able to change the text, something like : ‘Bromley design powered by WordPress’?
I find it very odd (and quite cheeky) that even though I’ve paid $99 to upgrade and paid for a theme I have to advertise for you. The problem is the site is for people in the UK and customize is spelt wrong.

I’ll take a look at that, it doesn’t look very good having a spelling mistake on a site for a UK writer :) Do you think there is any chance WordPress will eventually let us change the footer on themes we’ve paid for? I totally understand if I’m using a free one but this is incredibly cheeky!
With reference to my site looking different on mobile devices, I have mobile turned off so shouldn’t this prevent it doing what it is doing? It is extremely frustrating. I’ve just tried another theme which is the same.

Basically all new themes have a responsive design regardless whether the mobile theme is turned off or not.
