Need help finding the “just right” tutorial

Hi folks,
My weaving guild has decided to move their website from Weebly to WordPress.com. We also decided to do a complete overhaul instead of trying to import from Weebly to allow us to clean up the organization.
I’m tasked with this job. I’m not a web developer, but I’ve maintained websites (via dreamweaver, drupal) in the past, and we decided to go with WP.com because it has the drag-and-drop features that would make passing it on to future volunteers easier.
I’m struggling with finding tutorials that fit my needs. WP.com help is good for single tasks, and I’ve found lots of videos aimed at professional designers, but those both seem like more than we need and I don’t have the background knowledge to understand them immediately.
Examples of situations where WP.com tutorials aren’t enough:
- We picked a Block theme because of the Getting Started tutorials that said go that way. Two days later, I tried to make a font color update. After digging around for an hour, I learned that I couldn’t do that in this theme because it wasn’t a full-site editor theme. So, we switched themes. Luckily we found this early, but I wonder about what other mistakes I’m making now.
- I’m working on the artist gallery because it seemed like a nice, contained place to start. I uploaded the artist images and created pages for each artist. I created pages because these aren’t chronological blog-like items. When I thought about navigating to the next artist in the gallery, however, I started wondering if it would be easier to manage in the future if each artist had their own blog post, and then each post were all under the taxonomy of “artist gallery.” Would that allow me extra functionality like not having to manually change links as we add/remove artists? Can I make it so that these artist gallery posts don’t show at all in our main blog, which will be announcements? When trying to find tutorials on taxonomies, I feel like they are over my head, and I don’t know where to get the missing information because all the beginner tutorials focus more on really basic stuff like replacing text/images.
tl;dr: Any recommendations for books/youtube tutorials for an advanced beginner?
