the new format has totally blown me away and I have no idea where things are anymore! Is there a ‘how to’ video to introduce us to this new format? Right now I am just trying to find the shortcode for the post that is going live tomorrow.

There are also various pages on specific blocks, with new ones being added daily.
It should work more or less the same on your self-hosted site, https://dracaenawines.com/, but please ask at https://wordpress.org/support/forums/ if you need more help with that particular site.
