New pages versus new blog posts

Hi,
I am new to wordpress so i apologize if this is a really easy question or fix…
I am creating blogposts and making categories and linking, etc.
I noticed I can also create pages within pages other than the “Home Page”. But i noticed that i can’t create pages and then create categories for these pages. What i mean is..whats the difference between actual posts and pages? Why can’t i do the same things with each? If i write a post, how can i filter it under a specific page?The blog I need help with is: (visible only to logged in users)

Pages can’t be assigned categories or tags. This is normal.

As you’ll see in the page linked above, this isn’t possible. If you are using a Custom Menu, the best option for sorting your posts using the navigation is to use Categories to do so.
