  I am new to word press and would like to learn more about how to use and a basic understanding of themes.
  Is there a site you can recommend that explains in plain simple, english?

  The support pages here are about the best there are and cover every aspect of using wordpress.COM. Themes aren’t so well covered, but Panos over at http://wpbtips.wordpress.com/ has done reviews on some, and also has quite a bit of information on theme features and such not covered here. In general, I would start here.
