I want to build up an new website with 5 different accounts.
There is only one account email address allowed for each WordPress.com account. So the email address associated with a WordPress.com site would be that of the site owner/administrator. However, site administrators may invite other members to contribute to the site. See the Inviting Contributors, Followers, and Viewers support page for relevant information.
If you are the site owner and you invite four other usernames (each of which might belong to you) to contribute to the site, and the invitations are accepted, then you’ll have five users and five email addresses associated with the site.
Which package should I choose?
The above applies to any of the WordPress.com plans.
and may I change the email name later?
Yes, instantaneously. See the Update Email Address support page.

Hello there, If you are referring to 5 email forwarding addresses on a custom domain, then either the Personal or Premium plans will cover that. The Business plan has 100 forwards. See here: https://en.support.wordpress.com/email-forwarding/
As far as changing the email address, if you have used all 5 you would need to delete one. Keep in mind that if you’ve used that email address somewhere on your site or other correspondence, you would need to make arrangements in your email program to handle that change. There are no redirects in your dashboard here for previously assigned email addresses.
