How can I be notified before a post is published? We have student bloggers and I want to let them plug in their post but have final say before it’s posted. Is this possible?

If your student bloggers are users on the same collaborative blog, you could potentially change their user roles so that they can access the blog dashboard and draft posts, but not publish them. Here’s a summary of the different user roles: http://en.support.wordpress.com/user-roles/
(From what you said, “Contributor” might be a fitting role for some of these students.)
Alternatively, you can use the Writing Helper tool, accessible in the Post Screen of the dashboard when a user is writing/editing a post. A student can “request feedback” on a post before it’s published: http://en.support.wordpress.com/writing-helper/
