Option to Remove Clutter from Gutenberg Interface?

I am trying to get used to the Gutenberg interface and I just started to write a new post from scratch and I’m finding it unusable. I prefer to write in the WordPress editor itself and my pieces tend to be rather long, so they have a lot of paragraphs. However, with the block system, every time I press enter to add a new paragraph, a bunch of UI toolbars pop up. Each new paragraph has faded text that reads, ‘Start writing or type / to chose a block’ as well as a plus, and if I click on a piece I have already typed to edit it, a formatting ribbon pops up.
I have a learning disability that makes excessive information on my screen distracting. All of these pop-ups are overloading me and preventing me from writing anything on the site. While I understand that some people find these features useful for organizing their posts, what I need is a plain text option or something that makes all of these pop-up features invisible. Is there an accessibility option to turn off the block editor UI, or switch to a plain text editor of some sort? I am on the free plan so I am not allowed to use any plugins that would resolve this issue. Any help would be appreciated.

You can pin the block toolbar to the top of the editor, so it doesn’t appear for each block individually. To do that, click the … icon top-right in the editor, and click on Top Toolbar to toggle it on.
You can also click the gear icon top right to hide the settings sidebar if you don’t want to see that.
There’s no option to remove the placeholder text when a new block is created, though.
As an alternative, you can add the classic block in your posts. That will add a single block that mimics the behaviour of the classic editor, i.e. pressing Enter will just create a new paragraph inside that block, without creating a brand new block.
