  How do I change the order of posts listed in category sidebar to oldest first?

  Unfortunately, that cannot be changed. Posts will always be Newest first.

  I thought you could change that with some kind of custom menu

  If you’re just referring to the order of categories, you can definitely build a custom menu: http://en.support.wordpress.com/menus/

  Then, use a custom menu widget: http://en.support.wordpress.com/widgets/custom-menu-widget/
