Ordering Post Categories

I’d like to create a menu with a series of posts in each menu depending upon their category.
When I put my Categories into my Sidebar, I can’t seem to list them in my preferred order – it comes out alphabetically, which I don’t want. I can create a custom ordered menu by creating a Nav Bar, but that doesn’t list the story count per category. Which I’d also like.
Is there a way to group posts into categories, have the categories appear in the order I’d like, and to show the number of posts per group? The folks at SuperbThemes thought you might be able to help me accomplish this.
