Overall structure of my site

I want the blog to be sort of like a book with chapters. I use it for my travel. So I would like to be able to have one chapter be, perhaps, US travel, with subsections devoted to separate trips. I’d also like to be able to sort by Location, Say, United States subsection East Coast, and also by date, say 2015 trips, 2016 trips I can see how to post, but not how to set it up so the new chapter, US East Coast, is the post that is seen

I love well structured travel blogs with a nice design. :)
For the bigger sections, like chapters, I would recommend you to create parent Categories and then sub-categories to further sort your blog entries by location, as you wish. You can find detailed information on Categories, here: en.support.wordpress.com/posts/categories
You can add these Categories to a custom menu so your site can be well navigated.
You can set the date or schedule a blog post by following the instructions here: support.wordpress.com/schedule-a-post
Also, it is possible to add Tags to your posts with the year or any other attribute so your travel reports can be even more filtered, I mean your readers could more easily find what is the most interesting for them from your content.
