I have my own website with it own email address.
At the moment I have also subscribe to forums in other countries, which do have the same Avatar and access with the same email.
How can I change the email and avatar to the forums to keep them separate from my website and email? -

May I and can I create two different accounts with 2 different emails and 2 avatars?

I presume you’re referring to a WordPress.com account. There is only one email address and one avatar image (Gravatar) per account.

Not only can you, but if you create a second WordPress.com account, then it must have a different username and a different email address than the first. The Gravatar profile image could be the same or different on the two accounts.
To create a new account, while logged out of the present account, go to the page https://wordpress.com/start/delta-discover/user to begin the process, and then follow the instructions.

Can’t be done. While it may be possible to create a second account to keep the forums avatar and email address separate from the first account, this is likely to lead to confusion for those reading or responding to your forum posts. If in a forum post you request support regarding account A, or a site in account A, one would expect the Gravatar and username in your forum posts to link to that account, not account B.

You may do so, as long as you use different browsers. It may be possible, depending upon the browser and the browser settings, to create a second account while logged into an existent account, but I’ve found it impossible. One reason being that even the “Let’s get started” (create a new account) link, https://wordpress.com/start/delta-discover/user, is automatically redirected to the “Create a Site” page, https://wordpress.com/start/survey which only allows you to create a new site in the account that you’re logged into.

I can think of no reason why that shouldn’t be easily done.

I’m not sure what you mean. Two accounts must have separate email addresses, and one account may only have a single email address. Whether you can access two email addresses at the same time is not a WordPress.com issue. If you’re using the same service, e.g. Google, for both email addresses, then you won’t (I think) be able to open both at the same time, unless you use two different browsers.
