  I am thinking of writing a “novel” piece by piece, on my blog. However, I am worried that, if I want to get it published after I’m finished, would the website own the material, or would I?
  (short question)
  Who owns what is written in my blog?

  You do. The creator is vested with copyright to any intellectual property they create. However, given the nature of the web it will be subject to theft. Prevent Content Theft

  As your are writing a book the information I linked to may suit your content organization better than the conventional blog structure will.
