Page Edit Approval?

I know you can make new posts require approval (By changing user permissions to Contributor, or changing the code to spoof such an effect), but now I have a client who wants to have lots of control. He wants to allow his employees to edit their pages, however he wants approval every time a page or post is EDITED. I’m not sure if there is a plugin for this already (can’t seem to find one), or if anyone knows how to edit the user permissions to make this happen.
I’d appreciate any help I could get.
