Hello @oregonboard1,
It looks like you are trying to add custom items(in a parent child configuration) to the menu of your site.So to do that you can,
1. Go to My Site(s) → Customize(Beside the Themes option). This will open the site Customizer.
2. On the sidebar of the Customizer click on the Menus > tab.
3. Click the Primary > tab.
4. Now, if you want to new add items to the menu bar then click the Add Items button and if you want to create a sub-menu then just click and drag the menu under the menu item of which you want this menu item to be sub-menu of.
5. Once everything is done, click Save & Publish. You can read more about adding custom menu items and creating sub-menus here:

I still don’t understand. Here’s the issue:
I publish a page (NOT a post). It shows up as part of the header. I don’t want every page listed ON the header. So I (think) I need to assign each page to a category, correct? I don’t know how to assign categories for pages. There’s no place (header/footer/sidebar/widgets/etc.) that offers me that option for a page.
Maybe I can’t assign pages to a category? Maybe I need to develop a SLUG, or a TAG. Etc. ????
Can I please SPEAK to someone about this? I have several ‘how-to’ books, have used LYNDA.com, your website tutorials and even YOUTUBE. This is so very frustrating. I think it best if you could walk me through it either on the phone, or else w/direct access to my computer? Please.

Okay, when you say header, are you talking about the menu-bar which is in green or some other section? Can you please elaborate this?
If you are trying to remove the page links from the green menu-bar,
1. Go to My Site(s) → Customize(Beside the Themes option). This will open the site Customizer.
2. On the sidebar of the Customizer click Menus.
3. Click Menu Locations.
4. From the Primary Menu dropdown deselect the current menu.If that does not work, you can to reach someone from the staff by tagging this question with the modlook tag on the Tags section of the sidebar, so that it gets the staff’s attention.
Read about the modlook tag here: https://en.support.wordpress.com/getting-help-in-the-forums/#how-do-i-get-a-moderatorstaff-reply-for-my-question
