Parent pages

  Trying to make a levels of pages, but i want to manually connect them, not through parents as this makes all the levels appear on the first level, which is not what I want.
  Is this possible? Or is there a way of just removing the link for a third level page from the first level, so it can only be accessed from the second level?
  Also, is there a way to customise where the link appears on a page?

  Go to Appearance > Menus and customize away.
