  How to I publish a post as pending instead of having it publish directly onto my blog?

  You don’t have to publish anything immediately. Posts are saved as drafts by default until you hit “publish”. In the draft post editor you can set the date and time you want a post to appear. The button is just to the right of the “publish” button.
