  After creating a photo gallery for a post, how do I include additional photos into the post without them being automatically included in the gallery or slideshow in the post?

  You can use the Gallery Shortcode with the exclude options. Please read this page for more information on how to do that. Also read the note below the table on how to get the attachment ID.
