  I am not techie but there are some custom features I would like. For instance, I would like to show the category descriptions and a pic for each blog post. Is there a happy medium between hosting myself on .org and the plug n’ play of .com?

  I’m not sure what you mean when you say you would like to show the category description. Can you explain a little more? When I click on a category on one of your posts, the resulting page does display the description. For example: https://homeofthecheesecakelady.wordpress.com/category/one-for-the-road/

  As far as images, have you looked at using “featured images” for each of your posts? Hemingway Rewritten is a nice theme, but maybe you would prefer to “shop” for a different one that is more visual. You can do that in the Theme Showcase

  Also, you might be interested in the recipe shortcode as well.
