Post editor variance in default (i.e. non-theme) appearance. Why?

Whenever I see imagery of the default WordPress.com blog post editor, it has this nice classy Serif look to it, like this:

Now I do see basically the same on one blog that I manage:

Yet on another blog, it’s this sans-serif look:

This is all inside of the official WordPress app (for macOS) but I see the exact same in browser, both Chrome and Safari.
Note that these are the pure default editor views, not the theme styles, as per:

I know it might seem stupid but I greatly prefer the serif look. Is there some way I can ensure it on both blogs?
If it matters, the one I am getting Serif on uses an older theme, and the sans-serif a newer page editor theme. But that shouldn’t matter, should it? Since I’ve set them both to not “use theme styles”.
