Posting Suggestion Needed

I would like to create a specific collection of posts within this blog. I want readers to be able to access this collection specifically–and be able to read through the posts in chronological order–as it will be in journal format. I will not however be entering the content chronologically. How would I best meet these needs?
The blog I need help with is: (visible only to logged in users)

I believe that could be done by creating a Category for the collection and assigning that category to the collection of posts. When you place a Categories widget in the sidebar of your blog all the posts in the collection will be displayed in date order with the most recent being first displayed.

Thank you. I am familiar with the category widget, but here’s my added confusion. If I don’t enter the posts in the order I want them read, how can I re-order them (after posting) so that the reader can access them in the order I want?
I’m challenged to explain this, but I’ll be entering posts as I find material and sometimes a post will be out of order.

(1) You can change date/time stamps by editing.
(2) You can create a listing of the linked titles of the posts in the order that you want readers to read them in and place the list either on a Page or in a text widget. -
