is there anyway to shut off the feature where it displays the date posted, time, category, etc? Basically I want it so that when I add content it just comes on and does not have the details of when it was posted, etc. Is it possible to do this? If so how do I go about doing this?

The only possible way to do what you want may be achieved through CSS editing an existing WordPress.com theme. At WordPress.com where CSS is theme specific WordPress.com users cannot use the CSS stylesheets from other themes, an annually renewable CSS editing upgrade is available. It can be purchased and used by those who have at least a a moderate understanding of HTML and CSS to alter the appearance of their themes but not the functionality. So be aware that there is no Staff support for CSS editing a nd precious little Volunteers support.
Dashboard > Appearance > Edit CSS
