posts going onto homepage instead of catagories

Hello
I am wondering if anyone can help me out with the layout of my blog. I do not want the new posts that I do to go onto my homepage, but they are adding to it. I put them into the catagory that they should be, so I assumed that this would be the only place that they were visable at. All I want on my homepage is the description of the page and then they have to click on the catagories on the side to view them.
Also, anyone know how I can make it so that my menu is not in alphabetical order but will go in the order that I would like it in?

That’s the way sites are set up. What you want is to set up a static front page.

All posts go to the main blog as well as their individual categories. Yes, you can make a Static Page and then go to Settings and set that as the start page of your blog, but the SEO penalty is substantial.
