Hi, although my blog is set on “private”, meaning users cannot view my blog… does that also mean that our posts are also restricted from showing up in the search engines. Because even though my blog is private, my individual posts say that they are “public”. Should not be concerned because the whole blog is set on private?

yes. I had my personal blog on private after 3 years of having it public and it took a few months until finally my pictures ceased to show on search engine results whenever I search for my name. Regardless, even if somehow your pictures show up online, the people will never be able to read your site.

It means that each individual post is published on your blog. These are the posts that you can see on your blog whenever you visit.

If you log out of your WordPress.com account, you will see that your whole site is indeed private.

Those viewers would need a wp.com account, not a blog, but an account:

Invite only people you trust not to post your private information elsewhere online.

monmon is correct: you’ll only see that on your private blog while you are logged in and looking at a post or page editor. It says that because the software for wp.com does not change the wording in the post or page editors specially for private blogs: it only means the post or page has been published. There is different wording for a draft post or page.
Also note that on a private blog, your own visits will be counted as will visits from folks you have invited to view your site.
