Problem with Twenty Eleven Gallery/Feature Image

A couple odd things are happening when using the Twenty Eleven Theme.
1. I have a gallery and a customized feature image (header) using the Twenty Eleven Theme. On this page:
http://acmetalworks.com/home-page/custom-work/The customized header is showing up as a thumbnail on the Gallery page. When I try to delete it, it deletes it as a featured image.
2. On this page: http://acmetalworks.com/home-page/jewelry/
The subhead Jewelry and Stones won’t show up above the gallery of images.
Any thoughts? I hoped I could get into the HTML and just tweak these, but I guess you can’t do that on WordPress. Or can you?

1. That’s because you uploaded the featured image via that page. Normally a gallery displays all the images uploaded that way (in WP lingo, all the images attached to the page), while a featured image doesn’t have to be uploaded that way. So, two alternative solutions:
a) Go to Media > Library, get the ID number of the featured image, then go to the page editor, switch to HTML and modify the gallery shortcode to exclude that image from the gallery. Instructions here:

b) Go to Media > Library, delete that featured image, then go to Media > Add New, upload it again from your computer, then go to the page editor and set it as a featured image (clicking the Add an Image Tool then clicking Media Library instead of uploading it from your computer).2. That’s because you have mistakenly selected the showcase template for that page. Go to the page editor and select the default template from the pulldown in the Page Attributes module.
(3.) By the way, why did you turn all your pages into child pages to “home page”?
