Problems at building my blog

Hello,
I haven’t seen before purchasing my account that plugins are not a possibility at wordpress.com. I am a newbie with blogging so I am discovering step by step and I don’t know how to do lots of things on my own..! Now that I know that plugins are no more in the picture I don’t really know how to do things, even if I have spent a good amount of time trying.
What I want to know how to do without plugins are:
– how to save my data on my blog on a weekly basis
– how to create templates (portfolio, diaporama, full width, content slider) in a menu category
– I have a collective theme so I would like to have a page “our team” like the one in the demo theme
– how to archive my blog posts in a menu categoryI know I am asking a LOT of questions but it seems I can only find tutorials for wordpress.org on internet so I am a bit lost.
Is it possible to do all those things while being at wordpress.com or do I need to be at wordpress.org for managing everything on my own ?
It seems that this is possible after seeing all the demo themes of wordpress.com so I might need some extra light !
I have a premium account with a collective theme.I hope you can explain me a little more the situation and direct me to tutorials or topics that can help me building my blog. Thank you very much for your help and your time in advance. Maud

It seems that you can some of those things with widgets (author grid and archives for example) but you can’t place them in the menu categories so…is there any other solution ?

WPcom automatically backs up your site, but if you wish to create your own back up, http://en.support.wordpress.com/export/ You can limit dates and define what content as a part of the export file. You will however need to keep any images you use backed up on their own. Images have proven to be difficult.

All the themes we can use on WordPress.com can be found here http://wordpress.com/themes/ and many themes have special templates. We cannot create our own templates.

If you are talking about the “Collective” theme, you can get support in the special Premium theme support forum. First, have a look at the theme’s Showcase page for initial set up: http://theme.wordpress.com/themes/collective/ Make sure to click the Support button in that page’s sidebar for more info.

Posts are automatically archived in two ways: date and category. If you want to add access to your archives by date, the easiest is through the Archives widget. http://en.support.wordpress.com/widgets/archives-widget/
To create a Category archive, you can use the Category widget and/or create a Custom Menu. See here: http://en.support.wordpress.com/widgets/categories-widget/
