  I have created product pages using WooCommerce’s “products by category” in blocks. Currently only 6 rows are possible but I have more products that do not fit. Is there a solution to extend past the 6 rows or continue on another page????

  I would imagine that the pagination is available by default. Is that not happening? Could you share a screenshot of what you see as well?
