Publish posts on separate pages

I have recently set up my site where I want to share my poetry and short stories. I have set up one page for poetry and a different page for short stories. When I have tried publishing a test post, it is showing on both pages, how can I set the post to show on the specified page, so all of my poems will only show on the ‘poetry’ page and my stories will show on the ‘stories’ page?

WordPress told me that I’d be able to set the default posts page for where posts should go in combination with the categories set up, so I have both a ‘poetry’ and a ‘stories’ category set up, yet as you can see the default posts page option will only let me select one as the definitive answer

That makes a lot more sense – thank you. A follow up question – is there any way to edit the category page?
