How do I publish a post just under a category and not my home page? I have the ‘custom menu’ widget added to my sidebar and want to be able to pusblish posts that would just show here under categories and not go straight to my home page.

Then you will have to create a new page for your blog posts to appear on and another page as a new static front page as well.
    Pages > http://en.support.wordpress.com/pages/#create-a-new-page
    http://en.support.wordpress.com/pages/front-page/
After you create them you can change the settings here. > Settings > Reading

    Front page displays
    __Your latest posts
    __A static page (select below)
    Front page:
    Posts page:

There is only one dynamic page in a blog for posts and we cannot post to more than that one page. We organize our posts by assigning Categories to them. When we publish a post it automatically appears on the running page for posts and also on the Categories pages and Archives pages.

A custom menu allows you to display Categories in tabs along the horizontal navigation where normally only Pages tabs are displayed. If you wish you can also include Pages and custom links in your custom menu as well. If you choose a theme that does not display “tabs” in a horizontal menu then you use the custom menu widget.

So this would mean that my readers would start at a static page of some sort and would need to click a “Posts” page in order to read my most current “post”. My goal is to have my main posts show as normal (home page). I then would like to have a different ‘genre’ that is not necessarily my usual posting but some of my readers have requested. Example: I post about my normal topic and it shows on my Home Page. Then I add my photography shots but don’t want it to show on the Home Page but rather be a choice on a menu tab under a separate category. Not sure if this make sense or not : ) I appreciate your patience and time!

What’s important is clearly comprehending the differences between pages and posts > http://en.support.wordpress.com/post-vs-page/

These are the how-to instructions for achieving what you want to achieve:

    1. You create a custom menu. http://en.support.wordpress.com/menus/

    2. You add the Categories you want to display and arrange them in the order you want.

    3. Then you add and drop and drag the sub-categories below the appropriate Categories, and when you have everything arranged in the menu that you want you save the menu.

    4. Go to the “theme location” module at upper left on the menu page. Select your custom menu name from the pull-down labeled “primary location.” Click the save button in that module.

    5. Refresh your browser so that it isn’t possibly pulling a cached page, and view see your new menu with Parent pages and dropdowns to sub-pages.

Ok. So that means there is no way to “hide” a post from the Home Page like they do on WordPress.org or with the WPHide Post widget. Right?
I will work on these steps you gave me. Thank you.

THat is correct, there is no way to hide it from the main page except backdating it far enough that it doesn’t show, so it appears older than all posts on the front page. That may or may not push it down in the category page, depending on whether or not you’ve posted in that category recently.

Please help me. How do I get the first page going right?
All I want is for my page (The one it goes to when someone clicks on my blog) to come up with a “welcome” page. On it I woukld like to have different categories, and when clicked, the catagory would take you to a start page from that category. I had it right before, but now it’s goofed. Please help me!

That’s easy. Create a static PAGE, not a post, and name it Welcome. Publish it after you’ve put some content in: pictures, text, whatever you like. Then, once it’s published, go to Settings->Reading and the very first thing on that page is to choose where the landing page is. Select your page from the Static Page drop-down and then save the change.
