This explains how to order your pages: http://support.wordpress.com/pages/page-attributes/#order .
The archives page/link in the theme you are using is defined in the underlying theme files and there is no way to delete it, or to reorder it. The default tabs you will not be able to reorder though.

This has caused me to ask you one more question!
The web address is http://lasingle.wordpress.com/ and I want the home page to come up first with out the home at the end.
Does that make sense?Thanks

Set that page as the “static front page” as outlined here: http://support.wordpress.com/pages/front-page/ .

Categories will be arranged alphabetically in the categories widget. You cannot change that order unless you include a number at the beginning of each category name as required for the order you want.
If you have subcategories, go to appearance > widgets, open the categories widget for edit and then select “show heirarchy” and click save and then click close. Subcategories will be displayed alphabetically beneath the parent categories.

Another choice come to think of it would be to create your own categories widget using a text widget. You will then have to update it manually whenever you create a new category.
