Questions about the Contact Page!

Hi there,
I have three questions about the contact section on my page.
1. When someone goes to submit their information, it currently has the my page information in there sort of as a grayed-out placeholder. Is there a way to remove that?
2. Is there a way to make the sender’s email address anonymous? Similar to how Craigslist does? Where a person can contact me, but I don’t see their actual email address, so they feel more comfortable sharing what they have to say?
3. Can I send a customized bounceback email when someone does submit a contact form?
