If I purchase wordpress.com business, will I get access to unlimited themes for all of my blogs? And is this good for only a year? What if I want to continue the domain after the first year but not the unlimited theme access? Can I do this as well?

No. For one blog yes but not for all. The subscription is for one year and one blog only.

You can continue with the domain and choose not to renew the rest of the upgrades in the bundle. That will require Staff help.
Note that none of the plans allow you to run advertising or to upload your own themes or plugins. WordPress.com blogs cannot be equipped for eCommerce transactions. If you need a site that requires a custom theme or plugins — e.g., if you want to be able to sell things directly from your site, or if you want to install discussion forums — a self-hosted WordPress site might be right for you.
