Re-do my Categories to orderly Parent-Child format

lornakismet.wordpress.comI want to re-do my Categories and convert a lot of separate categories to Child categories under main Parent categories.
If I delete all my existing categories and then re-do them in a more orderly way (Parent-Child) will my posts retain their existing tags? (That would be good for me.) Or would all my existing tags disappear, in which case I would have to patiently re-do all of them, or at least the ones that I choose to re-do?Thank you……..
One thing about Categories is that I started out not realizing much about Categories and making scatter-shot categories as a result. Now I see my willy nilly approach as not tenable. -
I am just starting my blog. Sorry I can only add a simple questions to yours: how do I actually find categories? It is not obvious to me what button to push and find the categories already in use. Any help you can proide would be appreciated.

@zenarchitect, in your dashboard’s sidebar: Posts > Categories.

And please give the URL of your blog when asking questions (from “http” to “com/”) – or link your nickname to your blog as explained in the Sticky “8 Things to Know”.
(@Lorna: To turn categories into child-categories, you don’t delete them; you just go to Posts > Categories and edit them there. You can even batch edit all the ones you want to assign to one parent.)
